Staggering Swede
Prep - Cooking Time: 15 to 20 mins
- Place the cider, swede, chicken stock cube, chilli powder & paprika in to 1 pot and bring to the boil & then simmer for 15/20mins or until soft.
Ingredients - serves 4
- 500g swede, peeled & cut in to wedges
- 400ml of cider
- 1 Chicken stock cube or stock pot
- 1 tsp chilli powder
- 1 tsp paprika
- Salt and pepper to taste
- (Optional 100g of sultanas)

Swede Soup
Prep - Cooking Time: 20 to 30 mins
- Heat the olive oil in a frying pan before adding the swede, potato, onion & garlic & cook for 5 minutes.
- Pour over the stock and simmer for 10 minutes or until vegetable are cooked.
- Serve topped with fresh parsley.

- 1 Large onion, peeled and diced
- 3 Cloves of garlic, chopped finely

Roast Baby Swede Soup
Prep - Cooking Time: 1hr 10mins
- Preheat oven to hot. Trim, peel & chop swede coarsely.
- Combine swede with half of the oil in large baking dish; toss to coat thoroughly. Roast, uncovered, in hot oven about 45 mins or until swede is tender and brown all over.
- Heat remaining oil in large saucepan; cook onion, herbs & garlic, stirring until onion softens. Add chopped swede and stock; bring to a boil simmer, uncovered, 10 minutes..
Ingredients - serves 6
- 3kg baby swede
- 2tbsp olive oil
- 1 large onion (200g), chopped coarsely
- 1 clove garlic, quartered
- 2 litres chicken stock
- ½ cup cream
- ¼ cup finely chopped fresh tarragon + marjoram

Swede Cake
Prep
- Place oil, sour milk, eggs, vanilla essence, soft light brown sugar and soft dark brown sugar in to a bowl and whisk together until all of the ingredients are well blended.
- Sift together the flour, cinnamon, cardamom and salt and gradually fold this into the oil mixture.
- Gently fold in the grated swede and coconut to the mixture and pour into a greased and lined 8” round cake tin.
- Bake in oven 150C/300F/Gas 4 for 1hr 30 minutes or until centre of cake tests clean. Remove from oven and allow to cool completely.
- Mix together the Cream cheese, butter, icing sugar and lemon until a smooth creamy icing is made, spread this over the top of the Swede cake and serve.

- 4 oz Butter
- 16 oz Icing Sugar
- Juice of ½ a Lemon
