Swede is an antioxidant

According to the Institute of Food Research (IFR), some sinigrin breakdown products kill cancer cells. An example of a sinigrin breakdown product is the plant chemical Allyl-isothiocyanate (AITC). AITC is a volatile oil derived from sinigrin and found in some brassica vegetables including mustard, cabbage, horseradish, cauliflower, sprouts, swede, kale and wasabi.

Cooking makes it easier for the body to absorb these breakdown products, but unfortunately the vitamin C content is then reduced.

It should be noted that high consumption of phytochemicals can interfere with iodine metabolism and may increase the need for iodine-rich food, i.e. Seafood.
